Meatless lasagne with cashew cheeseLast weekend I teamed up with my friend Bolanile of Vegan In Nigeria (@veganinnigeria on Instagram) to host the first vegan meetup in Nigeria! Sometimes it can feel very isolating in this environment to be vegan, so you can imagine how uplifting it was to be around so many like minded people, I felt like I had died and gone to vegan heaven.
We watched Forks Over Knives (at least the first half, before PHCN struck) and had a vibrant discussion about the ethical basis and practicality of veganism. So many burning questions and interesting ideas were answered and explored. The great thing about the group was that there were only about 4 or 5 vegans, the other 15 or so people were omnivores or flexitarians just looking to learn more about healthy eating or get support on their journey towards veganism. So there was a good variety of opinions and a ton of learning from the discussion. I really hope we can continue to get lots of omnivores in future events!
Of course, it wasn’t all talk – we had some seriously yummy vegan eats too. Bolanile made an alkaline fruit salad sprinkled with chia seeds and drizzled with coconut oil (so yum!), and showed us how to make tacos with homemade chickpea flour taco shells. It might sound like a task, but you wouldn’t believe how quick and easy it is! And the tacos themselves were so fresh and delicious – filled with avocado, green peppers, onions and tomatoes.
Later on, I did a cooking demo for a vegan lasagne. Stay tuned for the lasagne recipe post!
We wrapped up with a group discussion, where several people shared their aspiration to go vegan. It was simply amazing to see so many people looking to start this journey! If you’re interested in starting on the path to veganism, or just want to try it out, you should definitely check out the 7-day Vegan Challenge programme by Vegan In Nigeria – you can get tailored meal plans and all the support you need to make a vegan diet work for you.
